Chef Nicholas’ India Adventure

This week has been very busy at ISAC. Not only have we been preparing for Saturday, when Chef Nicholas will begin teaching his three day Rolled Fondant Techniques class (with PME certification), the ISAC family has also been helping to prepare Chef Nicholas for his big trip to India!! The Rolled Fondant class ends on Monday evening and the very next day Chef Nicholas will be flying to India! Why? Cake decorating of course! Chef Nicholas will be instructing a four-day class at the Academy of Pastry Arts India, June 26-29, 2015! Honestly, I’m not sure if Chef is more excited to teach in India or eat loads of deliciously spicy Indian cuisine! 😉

This class, The Art of Cake Making, will be very in-depth. Chef Nicholas will be teaching his lucky students how to make gumpaste roses and rosebuds, hydrangeas, stephanotis, calla lilies, fantasy flowers, foliage, how to wire a spray of sugar flowers, coloring and glazing techniques, ribbon accents, different variations of gumpaste jewelry, how to use metallic and hologram dusts in new and different ways, how to modify rolled fondant (and how to pipe with it), {INSERT BIG BREATH HERE}, how to use patchwork cutters, FMM cutters, molds, extruders, pearl marker mats, and tips and tricks on finishing touches, storage, refrigeration, delivery, and set up! Whew, there’s even more, but I think you get the idea! This class will cover EVERY BIT of cake decorating from design to delivery. Chef Nicholas doesn’t teach in India every day, so he wants to be sure that each and every student taking his class will get the absolute most out of what he has to offer. Oh, and as always- lunch will be served! The Academy of Pastry Arts India has a guest house near the school, and is offering free accommodations to students traveling to the class from other states- yup a free place to stay! The Academy of Pastry Arts is a group of schools with locations in Malaysia, India, and the Philippines (opening within a few months). The pastry school in India just recently opened in March of this year. The inauguration was hosted by World Pastry champion Chef Ewald Notter, who followed the event with a master class. Courses offered at the Academy of Pastry Arts India include a three month Basic Certificate in Pastry and Bakery Arts, a six month Diploma in Pastry and Baking Arts, a nine month Advanced Diploma in Pastry and Baking Arts, and also a part time program for a Certificate in Pastry and Baking Arts. There are 14 in house instructors, and numerous guest lecturers who visit the school.  The academy will be organizing a yearly workshop event where four or five pastry chefs from different part of the world will be invited to teach master classes. This is the first year, and Chef Nicholas has the honor of being one of the first Master Pastry Chefs to teach at the yearly workshop. Also teaching at the Academy of Pastry Arts India’s first annual workshop is Chef Peter Yuen (Viennoiserie), Chef Christophe Morel (chocolate, pralines, and candy making), and Chef Lawrence Cheong (chocolate display). Classes in this workshop can be taken individually or you can take two or three at a special price.

I spoke with Niklesh Sharma, the Managing Director, and he is very excited to be hosting Chef Nicholas. He told me that he had attended Chef Nicholas’ workshop at the World Pastry Forum in 2007, and has been trying to arrange for him to teach a class since the first Academy of Pastry Arts opened in Malaysia. Niklesh is very pleased that Chef Nicholas will be teaching at the academy, and believes that it will be a great opportunity for all pastry chefs and cake designers in India. He also told me that Chef Nicholas’ class, along with the classes being taught by the other three instructors during this workshop is all that the Indian pastry community can talk about! Even though I won’t be at the class, I am almost as excited as Niklesh; I know that the pastry chefs and cake designers who will attend Chef Nicholas’ class and meet him for the first time will be blown away by his excellent teaching skills, his immense talent, and of course how nice he is!

Chef Nicholas is always being asked by his international students, “When will you be teaching in my country?!” Well, India- he’s coming!!
