Fall in love with Cake Decorating this fall!

Summer is coming to a close. The busy summer wedding season is wrapping up, and depending on where you live, the kids are either back at school, or will be in the next couple of weeks. The days will soon become cooler and longer as fall begins. Why not sharpen some of your cake decorating skills, as the summer rush slows down? Chef Nicholas has a lot of fantastic classes coming up this fall, and he would love to see you in class!

First up, in early September, Chef Nicholas is teaching one of his most popular classes: 5-Day Ultimate Gumpaste Flowers (with PME Certification). Why is this class so popular? In just five days, Chef Nicholas will teach his students how to create 18, yes EIGHTEEN, gorgeous gumpaste flowers. If you do the math, that is more than 3 flowers a day… It really is the ULTIMATE flower class. I am sure you’d love to know which flowers are included in this fabulous class: Rose, Stargazer Lily, Calla Lily, Cattleya Orchid, Cymbidium Orchid, Dendrobium Orchid, Gardenia, Gerber Daisy, Lizianthus, Hydrangea, Stephanotis, Lily of the Valley, Sweet Peas, Carnations, Daisies, Eucalyptus, Ferns, and Ivy. Where appropriate, buds and leaves will be included. Chef Nicholas teaches focal, secondary, and filler flowers plus assorted foliage, all in this one class. This class is ideal for out of town students; Chef Nicholas teaches a lot of flowers into this single class. As this is a PME Certification class, upon completion, students will receive not only their ISAC diploma, but also a PME Certificate. This class is one component of the three part PME Master’s Certification program. There are still seats available, and you can sign up by clicking here. The class dates are September 9-13, 2017.

Later in September, Chef Nicholas is offering two more PME Certification classes: Rolled Fondant Techniques (September 23-25, 2017), and 3-Day Advanced Royal Icing Techniques (September 26-28, 2017). Each of these classes is one component of the three part PME Master Certification. Rolled Fondant Techniques is a great class if you want to get involved in rolled fondant or if you need guidance and new ideas in expanding the techniques you already are using. Techniques covered will include: covering cake boards and dummies (round and square) with rolled fondant, crimping, embossing, quilting, embroidery, appliqué and inlay work, lace work, painting on a cake, using various molds in creating quick cake decorations, ribbon insertion, drapes and bows, ribbons, ropes and tassels…just to name a few!

In Chef Nicholas’ 3-Day Advanced Royal Icing Techniques class students will learn color flow, run-out, Wedgwood style figure piping, lace and filigree, Lambeth and English-style border work and string work. Students will learn the finer points of how to smoothly coat a cake with royal icing. Many different styles and techniques in this class can only be described as supremely elegant. Students will leave this class with the necessary confidence of working with royal icing. All classroom work is performed on dummy cakes, so you will take home a permanent reminder of all the techniques learned over the three days. Please note: Students attending this class must have attended the 3-Day Rolled Fondant Techniques Class with Nicholas Lodge, as the Advanced Royal Icing Techniques class will build upon skills and techniques learned during the Rolled Fondant Techniques Class). Upon completion of either of these classes, students will take home two diplomas- one from ISAC and one PME diploma.

If any students attending the three above classes completes all three components, the PME Master Diploma will also be awarded! Yay!

I am sure there are many dear readers out there who do not live anywhere near our school in Norcross (Atlanta), Georgia. If you live in California, or nearby to Cali, then I have great news for you! At the end of September, and the beginning of October, Chef Nicholas is teaching two classes at The Cakewalk: Cake & Candy Supplies! On September 30 and October 1, 2017, Chef Nicholas will be teaching Bridal & Wedding Sugar Flowers at The Cakewalk Upland location! This two-day class is packed with six gorgeous flowers: rose, stephanotis, calla lily, sweet pea, hydrangea, and cymbidium orchid. 

On October 3-4, 2017, Chef Nicholas will be teaching at The Cakewalk Orange location. This Tropical & Exotic Flower class will include: Plumeria, White Ginger, Anthurium, Bougainvillea, Hibiscus, and Bird‐of‐Paradise. That’s right, six more fabulous flowers packed into a two-day class! Chef Nicholas never disappoints!  ISAC 25th Anniversary Fun Fact: In 2010, after years of planning, The French Pastry School begins its 16-week professional class program, “The Art of Gateau,” of which Chef Nicholas is one of the principal instructors.
