2016 Class Schedule!!!!!!!

It’s Here! It’s Here!

Guess what?! The 2016 Nicholas Lodge Class Schedule has been released!!! Hooray!! I have had lots and lots of you asking me when it would be released, so today is your lucky day. Shall we talk about what Chef Nicholas has in store for all of you?

 Ok, before I get ahead of myself, this is only the schedule for the first part of the year. We are waiting on a few more details from the French Pastry School and some other classes Chef Nicholas will be teaching on the road. Once all those little things are finalized, we will be able to release the rest of our exciting 2016 classes!

January gets off to a big start with SIX different classes! Yes, that’s right SIX. Chef Nicholas will begin the year by teaching the very popular New Trends in Rolled Fondant class. This class will be held over the weekend of January 9-10; it’s perfect really, over a weekend so you don’t need to take time off and with plenty of time to recover after the holidays. This class covers so many, dare I say… TRENDY techniques including chevron patterns, ombre designs, various textures, stenciling, and have fun with all types of molds and mats! This class was introduced just a couple of years ago, and stills sells out really fast. Chef Nicholas is so spot on with his styling in this class, that every bride will be begging you to make their cake once they see the techniques you have perfected!

New Trends in Rolled Fondant

Chef Nicholas will then jet off to Orlando, Florida to participate in the ICES Florida Chapter’s mini classes! Chef Nicholas will be teaching three one-day classes from January 15-17. On January 15 the class will be the Blushing Bride Protea and Tuberose, on January 16 the class will be the Avalanche Rose and Bells of Ireland, and on January 17 the final class will be New Trends in Rolled Fondant. You can sign up for these classes by clicking the links above, and following the directions to get to the ICES Florida Chapter website. The ICES Florida Mini classes are being offered over a long weekend, and there are loads to choose from. The next weekend in January, 23-25, Chef Nicholas is back at ISAC to teach one of his classic classes: Rolled Fondant Techniques with PME Certification. Let’s talk seriously about this class for a minute, ok? Chef Nicholas has been teaching this class for years. This class is perfect for cake decorators who are looking to make the jump from buttercream to fondant. Even if you have worked with rolled fondant, this class is great because Chef Nicholas shows you just how versatile it is, and really explores the many tools and tricks that can be used with and on rolled fondant. If you are an expert in using rolled fondant, but are looking to get your PME certification, this class is for you too; this class is one of three modules needed to complete the PME Master Certification! After Chef Nicholas taught his Master Class with PME Certification in September we had a LOT of inquiries about when the next class would be held. The Master class is held over 12 days, and not everyone can take that time off work to complete all three modules at one time. If you are short on time, but still want to get certified, you need to sign up for this class! 

Rolled Fondant Techniques

Keeping up with Chef Nicholas can be tiring! Right after his Rolled Fondant Techniques with PME Certification class, he jumps right into teaching his New Trends in Sugar Flowers class, January 26-27! Students in this class will be learning the Parrot Tulip, Oriental Peony, Bells of Ireland, Love-in-a-Mist, and the Vanilla Orchid. This is one of our newer classes, but word on the street is that it may be the last time that Chef Nicholas teaches these flowers. So…. you MIGHT want to sign up before it’s too late. I have to admit, I will be sad to see this class go; the Parrot Tulip and Oriental Peony are two of my favorite Nicholas Lodge flowers. :( Oh, and FYI- the flowers in this class are shown in the main blog image at the top of this page. 

Chef Nicholas will finish January and spend the first half of February at the French Pastry School in Chicago. His lucky students will get him for weeks and weeks while we wait patiently for him to come home! Luckily we have our wonderful clients who come and shop to keep us company! 

Once Chef Nicholas does get back from being awesome in Chicago, he dives right back into teaching in his own classroom at ISAC! On February 20-21, he will be teaching his Springtime Gumpaste Flower class. Sadly, like the New Trends in Sugar Flowers class, this may be its last offering. So, if you are interested in learning how to create perfect Bearded Irises, Primulas, Wisteria, Lilacs and Forsythia now is the time to sign up. I LOVE Forsythia, so this makes me even sadder. BUT, it’s always fun to have one last hurrah! And on the bright side, I can’t wait to see what new flower classes Chef Nicholas is coming up with!

Sprintime Flowers

After saying goodbye to the Springtime Gumpaste Flower class, Chef Nicholas will head out to Texas for That Takes the Cake! Appropriately for the location, Chef Nicholas will be teaching Texas Garden and Wild Flowers, a two-day class (February 29-March 1). Chef Nicholas will be teaching Texans how to make Texan flowers! Ha! The actual flowers will be the Texas Bluebonnet, Brown-eyed Susan, Prickly Poppy, and the Texas Blue Bell. Just for fun, Chef Nicholas will also be teaching the Morning Glory and the honeysuckle! Texas Garden Flowers

In March we have another big class. Chef Nicholas will be teaching his 5-Day Ultimate Gumpaste Flower class with PME Certification. The Ultimate Rose, Stargazer Lily, Calla Lily, Cattleya Orchid, Cymbidium Orchid, Dendrobium Orchid, Gardenia, Gerber Daisy, Lizianthus, Hydrangea, Stephanotis, Lily of the Valley, Sweet Peas, Carnations, Daisies, Eucalyptus, Ferns, and Ivy! That basically works out to learning more than 3 flowers a day! Oh, and like the Rolled Fondant Techniques class, this is a PME certification class- it is one of the three modules needed to complete the PME Master Certificate. Plus, you walk out being able to make nearly any flower a bride might ask for! This class is insanely popular with students and nearly always sells out, not really surprising considering how much you learn!

5 Day Ultimate Flowers

In April Chef Nicholas will be heading back to Chicago to teach another stream at the French Pastry School. He will be gone most of the month, but as soon as he is done we all head down to the South Floridia Cake and Candy Expo, April 23-24! Chef Nicholas will be one of the head judges of  the Cake Decorating Competition! And ISAC will also have an awesome vendor booth!

After we finish up at the SOFLA Cake and Candy Expo, Chef Nicholas will be heading staying in sunny Miami to teach a two day class at Sweet Life Cake and Candy Supply. At this time they do not have their 2016 calendar on their website, but you can certainly call up for more information and inquire on signing up for Chef Nicholas class on April 26-27.
